Loaded Spring Salad

For lunch today, I created a salad with the veggies in my fridge that need to be used asap. I chopped up romaine lettuce, cherry tomatoes, sliced cucumbers, feta cheese, and large green olives. I opened a can of Garbanzo beans (cleaned and drained) and added 1/2 a can to the mix. To pull it all together, I drizzled on 2 tablespoons of Celebration Time, tossed, and plated for a quick lunch. Yummy, easy, and nutritious! Add some nuts, crunchy Asian noodles, sesame or chia seeds for texture.
