With some fresh mozzarella from @lillydenfarms, our "That's-A Spicy Pizza Sauce-A!", and fresh eggplant that needed to be used, I decided to make a lighter version of eggplant parmesan.
I sliced and placed eggplant pieces on a cookie sheet, added a little olive oil and fresh ground pepper, then baked for 15 minutes at 450 degrees. I then added a small amount of our spicy pizza sauce and some fresh mozzarella to the eggplant and placed them back in the oven on broil for 3 minutes. This made a delicious lunch and would be great served with some crusty bread and a side salad. Enjoy!
